Ugandan Sweet Potato and Pea Soup Recipe and How to Make it

Ever tested a Ugandan Sweet Potato and Pea Soup recipe? On this page we will guide you on how to prepare it for your guest or yourself.

Ugandan Sweet Potato and Pea Soup is a traditional Ugandan recipe for a classic soup of onion, sweet potatoes and peanuts in a tomato-based stock flavoured with ginger, chilli and garam masala. Ingredients

• 400g finely-chopped onion

• 2 tsp garlic, minced

• 1 tsp freshly-grated ginger

• 1 tsp salt

• 1/4 tsp cayenne pepper

• 1 tbsp Garam Masala

• 2 tomatoes, chopped

• 1 sweet potato, diced

• 900ml water

• 600g fresh green peas

Ugandan Sweet Potato and Pea Soup Preparation:

Method:

Fry the onions and garlic in a litte oil in a pan for 5 minutes then add the ginger, salt, cayenne pepper and garam masala. Cook for a few minutes before adding the tomatoes and sweet potato. Stir to mix and add the water. Bring to a boil, reduce to a simmer, cover and cook for 5 minutes before adding the peas. Cook for 10 minutes then take off the heat and add 400ml cold water. Purée the soup in a blender and return to a pot allow to heat through and serve.
