Ugandan Sweet Potato and Pea Soup Recipe and How to Make it

Ugandan Sweet Potato and Pea Soup is a traditional Ugandan recipe for a classic soup of onion, sweet potatoes and peanuts in a tomato-based stock flavoured with ginger, chilli and garam masala. The full recipe is presented here and I hope you enjoy this classic Ugandan version of: Ugandan Sweet Potato and Pea Soup

Ingredients

• 400g finely-chopped onion

• 2 tsp garlic, minced

• 1 tsp freshly-grated ginger

• 1 tsp salt

• 1/4 tsp cayenne pepper

• 1 tbsp Garam Masala

• 2 tomatoes, chopped

• 1 sweet potato, diced

• 900ml water

• 600g fresh green peas

Ugandan Sweet Potato and Pea Soup Preparation:

Method:

Fry the onions and garlic in a litte oil in a pan for 5 minutes then add the ginger, salt, cayenne pepper and garam masala. Cook for a few minutes before adding the tomatoes and sweet potato. Stir to mix and add the water. Bring to a boil, reduce to a simmer, cover and cook for 5 minutes before adding the peas. Cook for 10 minutes then take off the heat and add 400ml cold water. Purée the soup in a blender and return to a pot allow to heat through and serve.
